Mysore Masale Dose (ಮಸಾಲೆ ದೋಸೆ)

This dish needs no introduction! Mysore masale (ಮಸಾಲೆ ದೋಸೆ), as most of you would know, is one of the most popular dishes of Karnataka. This dish is liked by most people all over the country. The onion chutney (Red Chutney) adds a very unique flavor which further enhances the taste of the dosa. I do think that my mother in law makes the best Mysore Masale Dose in Town and she is very proud of the fact that she is a Mysorean!! 


I learnt this from my Mum in Law & I owe it all to her !! :-)

Now lets look at this lip smacking recipe:

Ingredients for the Onion Chutney:
  1. Onion- 1 and ½  of them cut into big chunks (Big Ones)
  2. White sesame seeds: ¼ tsp
  3. Tamarind-2 small pieces
  4. Red chilies- 7 Nos (Soaked in hot water)
  5. Desiccated coconut- 1 Tbsp
  6. Jaggery-Small piece
  7. Garlic- 2 Nos
  8. Curry leaves- 3 Leaves
  9. Coriander- A handful
  10. Fenugreek seeds- 3 Nos
  11. Red chilly Powder- A pinch
  12. Salt- 1 tsp


Preparation:

Grind all the above ingredients with very little water and make it into a fine paste.

Ingredients for the Green Chutney:


  1. Dessicated coconut- 1 Cup
  2. Roasted Channa Dal – 1 Tbsp
  3. Tamarind- Small piece
  4. Ginger- 1” Piece ginger
  5. Salt- To Taste
  6. Cilantro- 1 Fistful



Preparation:

Grind all the Ingredients with water.

Ingredients for the potato filling( Aloo Gadde Palya):

  1. Potato: 1 Nos
  2. Ginger- 1” piece finely grted or chopped
  3. Onion- 1 Big
  4. Curry Leaves- A few
  5. Urad Dal- 1 Tsp
  6. Channa Dal- ½ tsp
  7. Mustard- ½ tsp
  8. Green Chillies: 3 Nos
  9. Salt to taste
  10. Coriander leaves for garnishing



Preparation:

  • Boil the potato and mesh them into bite size people.
  • In a pan add oil ,followed by mustard seeds,ginger, Urad Dal ,Channa Dal ,G chillies,onions and saute them till the onions turn brown.
  • Then add turmeric,salt and mix well.
  • Finally add the mashed potatoes and give it a good mix and garnish it with coriander leaves.

Ingredients For the Dose Batter:

  1.  Urad Dal - 1 Cup
  2. Rice  - 3 Cups
  3. Chana Dal-1/4 cup 
  4.  Methi Seeds-1 tbsp
  5. Poha-2 tbsp
  6. Sugar -1/2 tsp
  7. Salt to taste



Preparation:

  1. Soak Urad Dal ,Channa dal  and poha together and make sure you soak the rice separately overnight.
  2. Grind them to a fine paste individually and then mix well.Make sure you dont make the batter too watery.
  3. Allow it to ferment overnight in room temperature.
  4. Mix salt and sugar and mix well.
  5. Heat Pan or griddle.
  6. Spread the dosa batter on the pan in circular motion to make thin dosa.
  7. Make sure you add a few drops of oil on the sides .
  8. Cook on both sides if desired.
  9. On one side smear the Red chutney, and place a small amount of the potato filling inside the dosa and roll.
  10. Serve it with butter on top and Green Chutney.

Tip:Lower the heat of the stove when you are spreading the dosa batter and then subsequently increase the heat.

Kesar Badam Peda (ಫೇಡ)

Peda (ಫೇಡ) is the most easiest to prepare of all the other Indian Sweets.Kesar (Saffron) gives not only a slight yellowish color to the Peda but also makes it very tasty.I am using Badam (Almonds) for decoration.
Here goes the recipe.

Ingredients:
  1. Milk Powder- 3 Cups
  2. Sugar  - 3/4 Cup
  3. Whole Milk - 300 ml
  4. Elaichi Powder(Cardamom)- 1 Tsp
  5. Saffron- A few strands (Soaked in Whole Milk)
  6. Almond Pieces- For Decoration
  7. Ghee- 1/2 tsp for greasing the plate

Preparation:

  1. Take a microwave safe dish and add milk powder,sugar,cardamom powder and mix well.
  2. Now add the whole milk along with the saffron and slowly mix.
  3. Place this bowl in the microwave for 3 minutes.
  4. Remove from microwave and mix well.You will notice the mixture becoming watery.
  5. Place the bowl in the microwave again for another 3 minutes.
  6. Please Note you are placing this mixture in the microwave for a total of 6 minutes.
  7. Now you could make small balls of the mixture and place it in a greased tray.
  8. Decorate them with sliced almonds.

Tip:Make sure you make the balls while the mixture is hot.Dip your hand in cold water while making them into round balls and flatten them a little.

Khaara Bun (Spicy Bun)

I miss Bangalore every single day. It’s not just the people or the streets or the language that I miss, it’s the feel of the city. Just the comfortable feeling I took for granted when I walked around knowing that every lane was home to me. Every street corner, every pretty park was ours. Always Namma BengalooruThe distinctive taste of Bangalore’s Khaara Buns is something that you can truly relish.
This goes well with coffee or tea and tastes even better when its hot. :)


Ingredients:

  1. Maida/All purpose flour- 1 Cup
  2. Wheat Flour -1/2 Cup
  3. Active dry yeast- 1 Tbsp
  4. Milk- 1/4 Cup
  5. Water-1/4 Cup
  6. Cooking Oil- 1/8 Cup
  7. Sugar- 1 tsp
  8. Salt-1 tsp
  9. Coriander- 1 Tbsp
  10. Dill Leaves - 1 Tbsp
  11. G Chillies-1/2 Tbsp
  12. Red chilly flakes- 1/2 Tbsp
  13. Pepper powder-One pinch

Preparation:

  • Heat milk and water in the microwave for 50 seconds.Add sugar followed by yeast.After 10 seconds give it a good stir.You will notice tiny bubbles appearing.
  • Now in another bowl mix all the other ingredients and then add the yeast mixture and make a dough.
  • Cover the dough and allow it to sit for an hour.You will notice that the volume would have increased to twice its size.Add a few drops of oil on top of it.
  • After half an hour, knead the dough again also punch down the dough and remove excess air.You could now make small balls of 6 and place them on a baking tray.Make sure you grease the baking tray with oil and also a few drops of milk.
  • Preheat the oven at 375 F.
  • Add a few drops of milk on the top of the buns before baking them.Place them in a tray and allow it to bake for 15 mins.After 10 mins open and check the color of the buns.Once they get brown you could remove them from the oven .
  • You could serve it with coffee or tea.

 Tip: Once you remove the buns from the oven immediately spread very little butter on them so that they look shiny.

Kodubale (ಕೋಡುಬಳೆ)

Kodubale/Kodbale (ಕೋಡುಬಳೆ in Kannada) is a small doughnut shaped spicy snack which is also referred to as spicy rings.I remember as a kid i would put these rings ,on all my fingers and munch them one by one.Kids usually love this snack.This could be eaten as a snack anytime.In some parts of Karnataka people also make different variants of "Kodubales" for breakfast.This is also very simple to make and extremely yummy!!

Ingredients:

  1.  Rice Flour- 1 Cup
  2.  Dessicated Coconut powder- 1/2 Cup
  3.  Gram Flour/Besan/KadleHittu-1/4 Cup
  4.  Jeera- 2 tsp
  5.  Red Chilli Powder-2 tsp
  6.  Hing/Asafoetida-1/2 tsp
  7. Green Chillies- 1 No:
  8. White Sesame seeds-1 & 1/2 tsp
  9. 4 tsp- Hot Oil
  10. Peppercorns- 4 Nos
  11. Salt- To Taste
  12. Sugar-One Pinch
  13. Oil -For Deep Frying

Method:

  • Dry Fry rice flour and besan individually and keep it aside. (Allow it to cool)
  • In a mixie Jar add dessicated coconut,green chillies,peppercorns and make a dry powder.
  • Mix the flours, dry powder,salt ,sugar,chilli powder,jeera and sesame seeds well.
  • Now add 4 tsp of hot oil and knead it.Use very little water to make the dough. Make sure you knead it well.
  • Make round shapes and deep fry them on medium heat.
  • After they cool down you could transfer them into an air tight container and store it.

Tip:In order to make circles make small balls from the dough and roll them into strands of desired size with your hands.Moist your hands using oil and join one end of the strand to the other end to form a circle.
